Red Lentils

Red lentil, sometimes known as ‘small’ or ‘Persian’ lentil, is the most widely grown in Australia. They are sold split for cooking (Masur dhal). The name ‘red lentil’ is derived from the red kernel (cotyledon) colour, which is exposed when split and the seed coat removed.

The seed coat colour varies from light grey, through brown to black, and may be speckled. Seed size is generally 4–6 mm in diameter, and red lentil varieties are classified as either small, medium or large-seeded types.

Australia is a dominant player in world barley export markets, representing 30-40 % of the world’s malting barley trade and 20 % of the feed barley trade.

Australia produces two-row spring barley that is plump and bright with moderate protein content. Harvested grain has low moisture content with long storage viability.

Malt is produced by soaking barley grains in water until they germinate and begin to sprout a new plant. The grains are then quickly dried in hot air (kilned) to stop the germination process. This process causes chemical reactions which create the enzymes and sugars needed for the brewing process.
